Cream Cheese Frosting

4 oz butter, softened
8 oz cream cheese, softened
2 # powdered sugar
1 tsp vanilla ext.
2 tsp almond flavor
Blend cream cheese & butter well; add sugar, blending well, & push down sides of bowl to blend all ingredients. Cool if too warm to cover cake to desired effect.

Easy as Pie Banana Bread

1/3 c butter
1/2 c sugar
2 eggs
1 3/4 c sifted flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 c mashed bananas
3/4 c chopped walnuts
cream together butter & sugar; add eggs & beat well. Sift together dry ingredients, add to creamed mixture alternately with banana, blending well after each addition. Stir in nuts. Pour into well-greased 9x5x3 inch loaf pan. Bake @ 350 (F) oven, 45 to 50 min., or until done. Remove from pan; place upright on rack & cool. Wrap & store overnight. For best results use very over-ripe bananas that are dark and very over ripe.

Simple Southern Pecan Pie

3 lg. eggs
2/3 c sugar
1 c lt. corn syrup
1/3 c butter3/4 c chopped pecans
1/2 c pecan halves
2 tsp vanilla ext.
dash salt
Beat eggs thouroughly with sugar, corn syrup,& salt. Melt butter & add to mixture, adding pecans & stir until mixed. Pour into unbaked pie shell, Bake in 350 (F) oven for 50 minutes, or until knife inserted near center comes out clean.

big question

i've started a blog, wanted to join heavenlycakesenjoyedonearth, and other similar sites, but can't seem to contact others, or post. I'm new to blogging, but desparate to share baking stories/expierences as I've been baking....hum, is it 39 years now. Can't be?! hugs, jocakegirl@gmail.com
